With tenures at Radisson, Marriott, Hyatt, Hilton, and Kempinski on his CV, maestro Maksim ensures the restaurant’s Mediterranean-inspired menu constantly evolves, with authentic ingredients finding life in new dishes. During our visit, 7th Floor was wrapping up its “Pasta Season” and launching the “Tartare Season.”

Each season brings a selection of new dishes, with the most popular ones earning a permanent spot on the menu. No voting is required – just order and enjoy.

“For this season, we’re introducing tartares – beef, tuna, and salmon,” Maksim announces as we chat at a table overlooking the sunset.

“Just like our pasta was a classic, crafted from scratch, so too will our tartares remain true to tradition. No fancy fusion cooking. All the ingredients will be traditional, with each recipe staying true to the roots with a twist,” he explains.

While sunsets at 7th Floor are magical, many guests opt for lunchtime visits to eat or have their business meetings by the pool with stunning sea views. Some say negotiations flow more smoothly in such an atmosphere; others simply enjoy the fact that Maksim’s team offers lunch dishes from the main menu as set meals at significant discounts. The chef insists he wasn’t trying to attract guests but was merely responding to their requests.

“We strive to listen to our guests and anticipate their desires. Business lunches will remain part of our offerings as long as they’re needed. Additionally, we’ll host monthly poolside sunset parties, transforming the terrace into a beach club. Many have asked about the return of our Saturday buffets – we’re working on that as well,” Maksim shares.
